- 1 Tablespoon Olive oil
- ½ cup finely diced onion
- 1 cup finely diced red or orange bell pepper
- 2 cloves garlic, minced
- 1 pound 99% fat free ground turkey
- 1 Teaspoon salt
- ¼ teaspoon ground black pepper
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ¼ teaspoon Chipotle powder* optional
- 1 teaspoon dried cilantro
- 1 10 ounce can Rotel
- 1 4 ounce can mild diced green chiles
- 1 14 ounce can black beans, rinsed and drained
- 1 cup corn
- 2 cups cooked rice
- 1 cups Lite shredded Mexican cheese blend, divided into halves. I like using trader joes lite shredded 3 cheese blend. it has great macros.
